Comparative characteristics of the quality indicators of canned fruits and vegetables for baby food

In the course of the work, the main groups of canned fruits and vegetables for baby food were considered; the peculiarities of production technology were studied; the analysis of the range of products of both domestic and imported origin was carried out. Organoleptic and physico-chemical quality indicators (mass fraction of dissolved solids, mass fraction of titrated and active acids) of canned fruits and vegetables were studied for compliance with the current regulatory and technical documentation.
