The aim of the study is to investigate the features of the amino acid composition of dry goat and camel milk from different manufacturers to determine the feasibility of including them in adapted formulas for early childhood nutrition. Objectives: to study the qualitative and quantitative analysis of the amino acid composition of dry goat and camel milk using highperformance liquid chromatography; to assess the balance of the amino acid composition and biological value of dry goat and camel milk. The objects of the study were dry goat milk of the brands Kozochka s oblachka and Tvoya ferma and dry camel milk of the brand ImmunoMoloko. Data were obtained on the qualitative and quantitative amino acid composition of dry goat and camel milk. The amino acid composition of dry goat and camel milk was analyzed using highperformance liquid chromatography (HPLC). The results of the study showed that the content of essential amino acids in the samples under study is comparable to the "ideal" protein and exceeds it by 49 % in some indicators. An analysis of the balance of the amino acid composition and biological value of the samples under study was conducted. Dry camel milk contains a large mass fraction of essential amino acids, but at the same time has a lower biological value compared to goat milk. Goat milk has a high biological value and a more balanced amino acid composition. Given this, the use of dry goat milk is more promising in the creation of domestic technology for dry mixtures for infant nutrition. The following studies will be aimed at determining the optimal components and quality criteria for the raw materials for the production of dry mixtures with high biological value.
