Presents the results of the intensive breeding of dairy cattle productivity occurred mikroèvolûcionnyj changes in protein composition of milk, which basically are quantitative. Of these the most important are the reduction of total protein in milk and its changing structure in favor of whey proteins, whose ratio of casein was 21.4; 78.6% at 18.9; 81.1% of the beef cattle.
