Trends of changes in the Mongolian national cuisine of the trans-border region

The national nutrition system is an essential element of culture in its material manifestation. Comparing the peoples of the trans-border region, the Buryats and the Mongols, who share a common history, one may note that the processes of blurring traditions of meal preparation and eating are proceeding differently nowadays, more actively among the Buryat population. Among the Mongolian population, there is a predominant persistence of nutritional trends. As a result of the study, it was revealed that the most stable in this regard were the traditions of preparing festive dishes, which are accompanied by rituals of meeting guests, decorating the table. It is noted that national cuisine remains an important element of ethnic self-determination of citizens, allowing them to preserve traditional characteristics that act as a sign of national identity for Mongolians and Buryats. The most obvious manifestation of this is the tradition of preparing festive and ritual dishes.
