The purpose of the work was the veterinary and sanitary assessment of rabbit meat prevented with a radioprotective agent based on a radiomodified variant of E. coli st. “PL-6”. The meat quality analysis was carried out comprehensively, including organoleptic, morphological and physicochemical studies. All samples met the requirements for good-quality meat. As a result, it was established that the use of a radioprotective agent for prophylactic purposes in rabbits one day before external gamma irradiation allows preserving the biological value of meat without deteriorating its quality indicators, and allows it to be used for food purposes without restrictions.
