The purpose of this work is to establish the practical application of the real-time PCR method for species identification of animal meat ingredients in food products and raw materials. This method allows to identify with high accuracy the presence of the desired species-specific fragment present in the sample in very small quantities. The results of the activities of the Tatar branch of the Federal Center for Animal Health Protection on species identification of animal and poultry meat ingredients in food products and raw materials in order to identify falsification and confirm their quality are presented. The use of the PCR-based method of meat product identification is necessary and appropriate for determining the species of meat and meat ingredients in the Halal standard quality system.
