The article deals with issues related to the improvement of quality indicators of meat in the process of industrial breeding of broiler chickens. The production of environmentally safe and high-quality poultry products that would satisfy the population's need for all the biologically active substances necessary for the body is one of the main tasks facing specialists engaged in agriculture today. At the same time, the main component of the quality of meat is high consumer indicators, and first of all its biological value. The purpose of our work was to study the effect of biologically active additives on the organoleptic characteristics of poultry meat and its chemical composition.
