The effect of rose hip infusion on the storage capacity of the paste in the shell

The article presents the results of studying the characteristics of Dahurian rose infusion obtained by ultrasound extraction, which showed the presence of a large number of biologically active substances in the extract, including ones with antioxidant activity. The results of experimental studies justified the possibility to add tne extract into the recipe of the paste in the shell. It is revealed that the use of the extract from the Dahurian rose, rich in substances with antioxidant properties, helps to inhibit oxidative spoilage of the product and provides less intensive growth of microorganisms in the finished product.
