The influence of the content of different doses of skimmed milk powder on the structural and mechanical properties of ice cream mixtures and energy consumption of technological equipment for the production of Plombi`eres ice cream

The quality of the ice cream is in direct proportion to the quality of the mixture. The important physical characteristics of an ice cream mixture are density and viscosity, which certainly depend on the chemical composition. The use of methods for assessing the structural and mechanical properties of ice cream mixtures makes it possible to develop a finished product with standard characteristics and high consumer properties. The results of the study of physical and mechanical and predominantly rheological indicators of ice cream mixtures can be used in constructive calculations of technological equipment for the production of ice cream. Determining the state of the structure of a mixture for ice cream using rheological characteristics will allow you to control the ice cream production process at the freezing stage. As follows from the study, the change in the relative viscosity of the mixture and the density of ice cream mixtures occurs depending on the added concentration of skimmed milk powder (SMP) in the recipe. With an increase in the dose of the introduced SMP, the density of the sample increases from 1068.52 to 1129.60 kg / m3. From the test results it follows that with an increase in the viscosity of the ice cream mixture, the values of the energy consumed by the freezer increase proportionally, but insignificantly, within the range of 4.3 ... 4.5%.
