Age-specific features of muscular proteins formation in pigs

The author determined the fractional composition of proteins and contents of essential and nonessential amino acids in muscular tissues of pigs of the White Large breed in age dynamics. The biological and food value of meat was estimated in connection with animals age and content of valuable proteins in muscular tissue. It was shown, that in pigs of the White Large breed may mark three stages of development of muscular tissue: the increase of muscular mass (1-4 months), the biochemical maturity (6-8 months), the attenuation of synthetic processes (8-12 months). Analysis of age-specific features of qualitative changes of proteins and amino acids contents in muscular tissues in different pig's breeds and lines permit to determine the age of biological maturity of animals on the basis of that must be select the parents for breeding and forecast the meat quality in future off-springs.
