Relationship between the contents of various products of oxidative degradation of milk proteins

Use of definition of carbonyl derivative proteins allows to reveal 8-10 indicators of oxidizing modifica- tion of proteins, however there are no clear understanding of functional importance of these indicators, pathoge- netic and diagnostic roles of various carbonyl derivatives. In this research the products of spontaneous and met- al-catalyzed oxidizing destruction of proteins have been defined. The study revealed a direct correlation between the contents of products of aldehyde-dinitrophenylhydrazone having neutral nature and ketone- dinitrophenylhydrazone having neutral character, similar to the direct dependence of the content of products al- dehyde-dinitrophenylhydrazone having both neutral and basic character in the course of spontaneous oxidative destruction. Indicators of aldehyde-dinitrophenilgidrazone neutral milk proteins and ketone- dinitrophenilgidrazone main character have an inverse correlation.
