Protection of blood plasma proteins and lipids against damage induced by ethanol and acetaldehyde

The incubation of human blood with ethanol and acetaldehyde leads to oxidative modification of blood plasma proteins (carbonylation, appearance of aggregated proteins) and lipids (lipids peroxidation products). Introduction of natural dipeptide carnosine into the incubation medium before addition of ethanol or acetaldehyde prevents oxidation of biomolecules. It was concluded that carnosine effectively protects blood plasma proteins and lipids against oxidative damage, induced by ethanol and acetaldehyde.
