Fatty acid profile and oil oxidizing stability of low-linolenic oil flax

The comparative characteristic of fatty acid oil composition of promising varieties and varieties with both modified and traditional fatty acid oil profile is presented. The flax lines selected from the sample k-2001 showed wide limits of linolenic acid content in oil (from 1.5 up to 56 %) that makes them a valuable breeding material of flax with modified fatty acid composition of oil. The variation of the linolenic acid content depending on the year of researches and the agroclimatic zone of crop cultivation is shown. Oxidizing stability of low-linolenic type of oil (2-4%) is by 4-12 times higher than of traditional oil (64 %).
