Importance of beta-lactoglobulin in the protein composition of goat milk

The research was carried out in Vysokogorsk area of the Republic of Tatarstan, where the protein composition of milk from 80 Saanen goats were studied, by electrophoresis in polyacrylamide gel. It was found that milk two kinds of animals, goats and cows have similar protein composition. Interspecies differences were more strongly expressed in the concentration of the individual fractions. In the studied animals in locus β-Lg two genetic variants were found: among AA and BB the prevailing one was genotype AA. β-Lg genotypes in goats have the same, the influence on the quality and technological properties of milk, as in cows, in other words, the best quality milk tend had to genotype AA, than BB.
