The article presents ways of pollution of food raw materials and food products with aflatoxins, which are one of the most dangerous groups of mycotoxins and have strong carcinogenic properties. The methods of detoxification of aflatoxins include mechanical, physical and chemical methods. In the article the author analyzes detoxification of aflatoxins by microwave disinfection.
