Analysis of fruits nutritional value of vegetable raw materials as functional ingredients for the development of dairy products in herodietic nutrition

The article discusses the theoretical prerequisites for the creation of dairy-based food products for herodietic nutrition. The object of the study was the fruits of plants and their mixtures with a milk-protein base. The authors analyze the nutritional value of such plant fruits as acai (Euterpe oleracea), elderberry (Sambucus nigra), dereza/goji berry (Lycium barbarum), strawberry (Fragaria moschata) and cranberry (Vaccinium oxycoccus). The satisfaction percentage of the daily need nutrients for the elderly has been established for these berries. The expediency of using a vegetable raw materials as an additional source of vitamins, minerals, dietary fibers and antioxidants has been proved in fermented milk product technology. Dereza/goji berries and acai berries were selected for further research and product development.
