Catering analysis on long-distance trains

Nutrition refers to the basic need in human life, plays an important role in his life, health and normal functioning of the body. Therefore, catering on trips can be considered not only as meeting basic food needs, but also as a basis for increasing the satisfaction of the service provided to passengers. Catering services for passengers have several important aspects, such as: satisfaction in basic nutrients and energy, ensuring the safety of the dishes and rations provided, obtaining emotional satisfaction from the consumption of the dish and, to some extent, the opportunity to get acquainted with the cuisine of the region of the country. The article presents a comparison of the provision of food and catering services provided by transport railway companies: JSC «TransKlasService» and OJSC «Russian Railways». The chemical composition of the Breakfast-lunch-dinner diet and the energy value of this diet were calculated. It was revealed that the diet provided by OJSC «Russian Railways» is more balanced than the diet provided by JSC «TransKlasService». In particular, the proposed diet of JSC «TransKlasService» covers the daily requirements for protein by 74.0%, carbohydrates-78.58 % and dietary fiber (DF) - 54%. The iron content is 125%. The total energy value is 82.2% of the daily requirement. The diet of OJSC «Russian Railways» covers the need for protein (124%), fat (106.8%), phosphorus (115%) and iron (126%). At the same time, it almost completely covers the daily energy needs (by 97.66%). A balanced diet for passengers of long-distance trains at 2500 kcal is proposed.
