Analysis of the market of meat and meat products of the Republic of Buryatia

The article presents materials on the study of meat and meat products of the Russian Federation and the Republic of Buryatia. The basis of the raw material base for the meat and meat processing industry is beef, pork, lamb, poultry (chicken). In recent years, the use of non-traditional meat raw materials, such as horse meat, venison, rabbit, ostrich, yak, game, etc., has been gaining momentum. This trend is largely due to the expansion of the range of products and the rational use of meat raw materials. An analysis of the meat and meat products market in the country and in the region showed that there is an increase in the total production of meat and meat products in 2021 compared to 2020. Among the range of meat products, a significant increase in the production of meat and meat-containing canned food was revealed. In the Republic of Buryatia, there was an increase in the total volume of production of meat and meat products, namely: semi-finished products, canned food, meat and meat products of the first category, etc. In the zone of activity of the Buryat customs, there is an increase in the export of meat raw materials and products, the predominance over imports. Thus, the products of the meat industry are traditionally in great demand among the population of our country and the region, as well as abroad, therefore, further research in the field of expanding the range of meat products is promising.
