Blueberry in school meals: structural and analytical modeling of consumer properties

The article presents systematic analysis of use value of highbush blueberries (Vaccinium corymbosum L.), and substantiates the expediency of using blueberries in products for children and adolescents. Consumer properties indicators of highbush blueberries cultivated in the Republic of Belarus were experimentally assessed. The obtained data are systematized in the form of a structural-analytical model of consumer properties, reflecting assessment rate of purpose properties, shelf life, safety, ergonomic and technological properties. New data on technological properties relate to thermal and hydrothermal processing operations (freezing, extraction, blanching). Directions of product range development of blueberry-based school meals are proposed. The potential impact of the developed products on the body was assessed using the hygienic ranking method.
