The research of the dry matter extraction from the pine-tree needles is the first step in the development of the new milk product with the effective ingredients creation based on the secondary raw milk materials. The completeness and the speed of extraction are influenced by the degree of grinding (particle size), the temperature and the duration of the process (exposure), the proportion between the raw material and extragent quantity. At this stage the influence of pine-tree needles grinding degree and exposure on the extraction intensity has been investigated. It has been shown that at any studied size of needles the speed of extraction of the dry matter was the highest at first 10 min of the process. For further research the size of particles of 0,1…0,3mm and 50 min-exposure have been taken.
