The researchers have studied the issues of energy, steam and cold costs for carrying out technological processes and the equipment operation involved in the process of manufacturing cheese and cottage cheese. The mentioned problems present a part of the work aimed at updating the first edition of the information and technical reference book, which is dedicated to the best available technologies in the field of milk processing. The results of the work will be taken into account in the new edition of the reference book.
