Combined method for deep processing of caviar by-products

The article presents the rationale for the development of method of fish by-products processing at fish processing enterprises left in the form of waste during the punching salmon fish ovaries. The results of the pilot studies identified the advantages and disadvantages of two ways of effecting the waste products of caviar production in industrial process: enzymatic hydrolysis using "Protamex" enzyme and thermal processing with barometric impact. The article shows expediency of application of a combined method consisting in the after-working alternation of biomodification of fish by-products with hydrothermal destruction. As a result of the combined action, several fractions have been found to centrifuge after centrifugation, which are divided at the decanter. The authors determined the biological value of the protein produced by hydrolysate containing essential amino acids among which methionine with cysteine, threonine and lysine are predominant. It has been experimentally established that the composition of the protein fraction of the hydrolysate contains biologically active low molecular weight peptides in the amount of 41.52%. As a result of scientific research, the feasibility of a combined method for processing waste from caviar production has been confirmed, which makes it possible to additionally obtain a lipid fraction from the studied fish by-products.
