The substantiation of use the biologically active additive (BAA) «Retsiken-RD» as replacement of a white bread in a compounding fish forcemeat products for functional orientation is resulted. As a basis the muscular fabric of the carp who has been grown up in fish farming of Kirov oblast was used. The comparative analysis of chemical compound of white bread and BAA for an establishment of advantages is lead. The high maintenance in «Retsiken-RD» biologically active substances will promote increase of food value, to correct structurally-mechanical properties of forcemeat systems.
