Assessment of economic efficiency of production of enriched serum protein concentrate

The article presents data on assessment of economic efficiency of production of whey protein concentrate (WPC), obtained by thermomagnesium coagulation with subsequent fermentation of probiotic cultures.The assessment was carried out by calculating the market value (TAM, SAM, SOM) at the sale of the finished product and technology, as well as a comparative analysis of the main competitors. The calculation of market value showed the prospect of producing enriched WPC both for the project developers themselves and for potential investors. The competitive advantage of developed enriched WPC compared to analogues is the use of a new technology for producing whey protein without the use of an expensive ultrafiltration plant, which reduces the cost of the final product, as well as enriching the product with magnesium and probiotic cultures, which gives additional functional properties.
