Quality and safety indicators of sea-buckthorn dehydrated with microwave technology use: results of two-year storage

The article presents the results of studies of dehydrated sea buckthorn obtained using microwave vacuum technology. The safety indicators of sea buckthorn samples were studied immediately after production and after two years of storage, including microbiological indicators, the content of toxic elements, pesticides, and mycotoxins. The quality indicators, such as organoleptic properties and the content of carotenoids, were also studied experimentally. The article provides an assessment of the quality and safety indicators of dehydrated sea buckthorn that has been stored for two years, and recommends its potential applications.
