The comparative analysis of raw cow's milk from farms in the Oryol region for 2014-2016 years. Considered the organoleptic, physico-chemical, microbiological and toxicological properties of milk. The following parameters were studied: % fat and % protein in milk, number of somatic cells, density, acidity, freezing temperature, concentration of lead, arsenic, cadmium, strontium and cesium in cow's milk.
