The article examines the development of regional gastronomic tourism as a separate innovative type of tourism. The relevance of this problem lies in the fact that gastronomic tourism is a fairly new phenomenon in Russia and requires additional scientifi c research in this area. The research objective is to identify and analyze the problems and prospects for the phased development of regional gastronomic tourism in Russia using the example of Dagestan. During the global sanctions wars and the intensive development of domestic tourism, the North Caucasus is becoming an attractive tourist destination for hedonists. Tourists who want to treat themselves to delicious food made from organic products, love ancient history and national fl avor, will be able to appreciate Dagestan as a place of true gastronomic enjoyment. Dozens of indigenous ethnic groups, cultures, and culinary traditions fl ourish in this sunny region. The author studies in detail the national Dagestani dishes, draws conclusions about the ways of popularization of culinary tourism in the regions and its impact on the creation of the tourist brand of Dagestan.
