The article addresses the issue of forming the professional culture of specialists in food technology and catering organizations in the educational environment of universities, using the case study method’s gastronomic discourse in accordance with the pedagogical condition of “Professional Identity”. The relevance of the research lies in the need to transform the educational process in line with the Presidential Decree “On National Goals and Strategic Objectives for the Development of the Russian Federation”. Research methods: theoretical analysis, testing, formative experiment, mathematical statistics method and nonparametric criterion X 2. The novelty of solving the problem consists in the development of a technology for the formation of a professional culture of a specialist using the condition “Professional identity” based on the gastronomic discourse of the case method. The theoretical and practical significance consists in the development of the content of the conditions for the formation of a professional culture of technology specialists and catering organizations, contributing to the mastery of the competence of “critical thinking”, as well as experimental verification.
