Design of wild-growing berries of Transbaikalia drinks

The republic of Buryatia is rich in wild-growing berries. However natural resources are not widely used. The chemical compound of berries of Transbaikalia (cranberries, cowberry, bilberry and blueberry) is investigated within the frame of the work. The received results have shown that the maintenance biologically active substances in investigated samples are exceeded by data on an average in Russia. The restrictive factor of use of berries is their seasonal nature and short duration of storage. Variants of reception of juices, syrups and juice containing drinks are investigated. Chemical compounds juice containing drinks are studied, flavorings and aromatic properties are investigated. Optimum components of syrups, juice containing drinks and mixed juices are established.
