The restaurant service in the 19 th and early 20 th centuries occupies an important place in the culture of everyday life in Russia. The country did not have a comprehensive education for services industry; however, there were innovative training centers for restaurant service, which presented amazing recipes for meals and products, which are still popular in both the public and home cooking. The mélange of the Russian style and the innovations from the Western European cuisine develops in the restaurant service practice in the 19 th and 20 th centuries in Russia.
