Today, domestic tourism in Russia is experiencing an unprecedented upsurge, caused, on the one hand, by the foreign policy situation, and, on the other, by the growing interest in the cultural traditions of multinational Russia. Thanks to the active support of the Government of the Russian Federation, new destinations have been formed for traditional tourist routes. Over the past few years, there has been an increased interest in food traditions, called gastronomic tourism. Gastronomic tourism is an important factor influencing the development of the economy, culture and education in various countries and regions. It stimulates the development of local businesses, promotes the preservation of national traditions and cultures, and draws attention to issues of healthy nutrition and ecology. One of the varieties of gastronomic tourism is ethno-culinary tourism, which is closely related to the ethnic culinary tradition of the peoples and regions of Russia. It gives tourists the opportunity to better understand other cultures and expand their knowledge of world cuisine. The baking tradition in Russia is of great interest. Given the length of the country from West to East, we can meet with different bread recipes, a variety of which is the Saratov kalach, to which the study is devoted.
