Sensory inspection of yogurts sold in the market of Ulan-Ude technology of food balm based on Baikal herbs

Yogurt is one of the healthiest fermented milk products. It is in demand by various age categories of buyers, as it has a whole range of competitive consumer characteristics: high nutritional and biological value, pleasant taste and aromatic properties, affordable price. Market analysis showed that in Ulan-Ude, semi-fat yoghurts with a mass fraction of fat from 1,5-2,5 prevail. This category of yogurt is produced by more than 70 % of the brands represented in the trade organizations of the city. Products with low fat content account for about 8 % of yogurt, with classic fat content from 2,5 to 4,5 % occupies a little more than 20 %. The vast majority of yoghurts have various flavorings. An analysis of consumer preferences revealed that drinking yoghurts with "Strawberry" filling are in the greatest demand. The sensory inspection of yoghurts showed that the yogurt of the «Fermerskoye Podvorye» brand has the best performance. It is characterized by the most harmonious combination of sour milk and strawberry taste. It also has a homogeneous consistency, thicker, in comparison with other samples, without whey separation.
