The article is devoted to a comparative assessment of the quality of 1 class unrefined sunflower oil at different periods of storage. The organoleptic characteristics of unrefined sunflower packaged oil and unrefined unpackaged sunflower oil at different periods of storage are studied. The authors also conducted the research on the physical, chemical and hygienic indices of sunflower oil at different periods of storage.
