The article deals with the problems of ensuring safe dairy products of high-quality production from raw material of areas of ecological concern. The factors of contamination of raw milk and harmful substances transfer to products of its processing are determined. The introduction of control and monitoring of quality and safety of dairy products is justified based on State Standard GOST R ISO 22000-2007.
