Specific features of the protein composition of goat milk

Overall, goat's milk is characterized similar to cow's milk protein composition. In both types of milk is dominated by the ratio of caseins and whey proteins with approximately equal amounts, and respectively 76,4; 23,6 and 77,6; 22,4 %. Their main proteins in milk are αs1-, β-, αs2- caseins and β-lactoglobulin and α-lactalbumin. However, goat milk showed a reduced content of k- casein, which may have an adverse effect on the properties of milk cheese making.
