The provision of international safety requirements for public catering services at domestic enterprises is carried out through the introduction of the international HACCP system (Hazard Analysis and Critical Control Points - risk analysis and critical control points). Ensuring the safety of public catering services is an urgent problem and is monitored during regular internal audits. During internal audits, compliance with the basic requirements for ensuring the safety of food services is monitored. The paper considers the results of internal audits using the example of a network pizzeria.
