The possible application of electrophysical methods for identification and control of vegetable oils quality is justified in the paper. The results of the study on samples of various vegetable oils regarding their fatty acid content, main physical and chemical indicators (viscosity, refractive index, acid and peroxide numbers) and electrical characteristics are given. It’s found out that the rates of characteristic oscillation frequencies of the electromagnetic field can not be used to identify oil according to raw materials, but they have high correlation dependence with peroxide numbers.
