As part of the work on updating the first edition of the information and technical reference books on the best available technologies in the field of milk processing, based on a survey of enterprises, the researchers have introduced some changes in marker substances that characterize the technologies used, the features of the production process at the facility that adversely affects the environment as well as the data on technological, technical and management decisions that make it possible to achieve a high level of environmental protection in cost-effective and regionally applicable ways.
