Economic component and competitive advantages of development and manufacture of specialized dairy product

The present scientific paper considers the economic component of development and feasibility of manufacturing a specialized dairy product intended for the obesity diet with the account of competitive advantages formed in the process of developing a product in view of medical and biological, socio-economic and technological issues. The article gives statistics data concerning manufacturing of dairy products, their consumption per capita, as well as the experience in the development and prospects for manufacturing an innovative food product. According to medical and biological research, there is currently an increase in alimentary-dependent diseases, among which obesity of various age groups occupies one of the central places. The main danger is that obesity entails a number of possible cardiological, neurological, musculoskeletal, etc. disorders. One of the ways to eliminate obesity problems is to change the patient’s lifestyle, including working out of a diet based on fat and carbohydrate reduced foods, as well as increased physical activity. The diets of that kind should definitely include tasty and healthy food, be balanced in its vitamin and mineral composition, and also satisfy the energy requirements of a particular population group. New technological solutions introduced for the production of innovative specialized milk-based products do not incur any additional costs associated with the purchase of separate equipment or the enterprise modernization. These products can be manufactured on the existing technological lines for producing similar products. The development and launch of specialized food products on the market requires an integrated approach involving representatives of the industry, science and the expert community. The work presents the results of research on the development and manufacture of a specialized milk drink, provides data on its composition and quality indicators.
