The analysis of experimental data during_the extraction process of pine needles water-soluble substances using water has been carried out. The suitability of Erofeev - Kolmogorov equation for the mathematical modelling of the process has been shown. The relationship between the kinetic parameters and the input parameters of the extraction process (a dose of needles, particles size, temperature) has been stated. The received data have become the basis for optimization of the extraction process of pine needles water-soluble substances.
