Bioactive food additives are prevalent in the athletic food. They don't solve the problem of athletes' rational nutrition, and only partially adjust the general direction. Most bioactive food additives contain the proteins of the milk serum. Milk serum is a very good medium for the development of microorganisms. In order to preserve the initial quality indices the microbiological analysis of milk serum which is a raw material in the athletic food manufacture has been performed.
