Contemporary trends in global gastronomy tourism

This article examines the role of gastronomic tourism as a strategic factor in the sustainable development of national economies amid the transformation of global supply chains. The author provides a detailed comparative analysis of three dominant global models: European, Asian, and Latin American. The European model is examined through the lens of the concept of terroir and a strict system of certification of origin; the Asian model is viewed as an example of the cult of street food and the introduction of high technology; and the Latin American model as a mechanism for transforming local "superfoods" into a macroeconomic resource. Particular attention is paid to government support mechanisms (subsidies, tax incentives, and the cluster approach) and the impact of digital transformation on the development of the industry.
