The paper presents a comparative analysis of various technologies in milk sugar production. As a result, it has been concluded that the traditional technology is inferior to intensive technologies that are implemented using membrane methods of processing raw materials. For the theoretical substantiation of the crystallization regimes, the metastability boundary has been determined experimentally.
